When you love nachos as much as I do, it is only fitting that one would find a way to make nachos for breakfast. Now, this is not a breakfast that I will make often, chips for breakfast is not the healthiest, but for a special treat every once in awhile is nice. Plus my family devoured these nachos, so I know they did not mind chips for breakfast. Although they were quite surprised to see chips for breakfast.
Breakfast Nachos
Ingredients:
- 16 ounces roll breakfast sausage
- 12 slices bacon
- 10 eggs
- 13 ounces tortilla chips
- 8 ounces Mexican cheese blend
Optional Toppings
- salsa
- sour cream
- pickled jalapeño slices
- diced tomatoes
Directions:
- In a non-stick skillet cook the sausage until crumbled and completely cooked.
- While the sausage is cooking, in another non-stick skillet cook the bacon until crispy. Allow to cool slightly and crumble.
- Use the non-stick skillet of either the bacon or sausage, whichever is done first. Remove some of the grease if there is too much, you need just enough to cook the eggs.
- Cook and scramble the eggs.
- Place the chips on a baking sheet and top with sausage, bacon and eggs. Sprinkle with cheese.
- Place the baking sheet under the broiler just until the cheese is melted, about 1-3 minutes.
- Top with any additional toppings you desire.
