For the beer in this soup I used a Yuengling, which is a lager. The darker the beer you use the more beer flavor the soup will have. The lighter the beer the less beer flavor the soup will have. My husband and I both thought the lager was the prefect choice.
Bacon Cheeseburger Beer Cheese Soup
Ingredients:
- 12 ounces turkey bacon, cut into pieces
- 1 pound ground turkey
- 1/4 cup all purpose flour
- 1 tablespoon Montreal steak seasoning
- 2 teaspoons smoked paprika
- 12 ounces beer
- 4 cups half and half
- 16 ounces shredded cheddar cheese
- croutons
- diced dill pickles
Directions:
- Heat a large pot over medium-high heat.
- Add in the bacon and cook until just starting to get crispy, stirring occasionally.
- Add in the ground turkey and cook until completely cooked, stirring occasionally and breaking the turkey up with a spoon.
- Drain any grease, leaving about 2 tablespoons.
- Add in the flour, steak seasoning and paprika. Stir until everything is well mixed.
- Pour in the beer to deglaze the bottom of the pan while scraping to lift up any brown bits. Cook stirring often for 3 minutes.
- Pour in the half and half and stir to combine. Bring the mixture to a slight boil.
- Add in the cheese and stir until completely melted.
- Serve immediately or reduce heat to a simmer and simmer until ready to serve stirring occasionally.
- Top each serving with diced pickles and croutons.
