Quick cook oats are mixed in the waffle batter to create a hearty and filling waffle. Chocolate chips are added for a bit of sweetness. It is like a oatmeal chocolate cookie in waffle form.
Oatmeal Chocolate Chip Waffles
Ingredients:
- 1 1/2 cups all purpose flour
- 3/4 cup quick cook oats
- 1 tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1/3 cup chocolate chips
- 2 eggs
- 1 1/2 cups milk
- 1/4 cup canola oil
- 3 tablespoons brown sugar
- 1 teaspoon vanilla extract
Directions:
- Preheat the waffle iron according to the manufacturer's directions.
- In a large bowl, whisk together the flour, oats, baking powder and cinnamon. Stir in the chocolate chips.
- In a medium bowl, whisk together the eggs, milk, oil and brown sugar.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not over mix.
- Pour the amount of batter needed for the waffle maker, according to the manufacturer's directions and cook according to the directions.
Notes:
The number of waffles will vary depending on the type of waffle maker you use. I used a Belgium waffle maker and got 4 waffles.
