I got on such a kick last summer with overnight oats, that I forgot about baked oatmeal and how delicious it can be. This version is a great way to use up those leftover bananas that are starting to get brown spots. It is also a great way to use up any leftover frozen blueberries. But you do not have to use just blueberries, any berry would work well.
Blueberry Banana Baked Oatmeal
Ingredients:
- 2 cups old fashioned rolled oats
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/2 cup blueberries, fresh or frozen
- 1 large banana, sliced
- 1 egg
- 1/3 cup maple syrup
- 2 teaspoons vanilla extract
- 2 cups milk
Directions:
- Preheat oven to 375º F. Grease an 8-inch square baking dish with cooking spray.
- In a large bowl, stir together the oats, baking soda, cinnamon. Transfer the mixture into the prepared baking dish and spread into an even layer.
- Evenly place the bananas and berries on top of the oats.
- In a medium bowl, whisk together the egg, maple syrup, vanilla extract and milk.
- Slowly pour the milk mixture over the oats.
- Bake for 30-35 minutes or until the top is golden brown.
