Back in the day I used to love Rice-a-Roni. I enjoyed trying all of the different flavors. Also it was a quick and easy side dish.
Since I have been trying to cut out processed foods and artificial flavors, Rice-a-Roni is no longer something I buy. I tried once before to make a homemade version, but it did not turn out sell. But when I saw a recipe again, I decided it was time to try it again.
This recipe turned out delicious! I can not really compare it to Rice-a-Roni, since it has been so many years since I last had it. However I can tell you this homemade variety is really delicious and worth making.
Homemade Broccoli Au Gratin Rice-a-Roni
Ingredients:
- 1 tablespoon olive oil
- 1/2 cup brown rice
- 1/2 cup orzo pasta
- 2 cups low sodium vegetable broth
- 2 tablespoons unsalted butter
- 1 cup finely chopped broccoli
- 1/2 cup shredded sharp cheddar cheese
- 1/4 teaspoon ground black pepper
Directions:
- In a medium saucepan, heat the olive oil over medium heat.
- Add in the rice and orzo, stirring to coat. Cook stirring often until the orzo turns golden brown and the rice smells nutty, about 3-5 minutes.
- Add in the broth and bring to a boil.
- Turn the heat to low and cover the saucepan. Cook, covered, for 20-30 minutes or until most of the liquid has been absorbed.
- Add in the broccoli and cook for an additional 3 minutes.
- Remove the saucepan from the heat and add in the butter, cheese and pepper, stirring until well mixed
- Cover and let sit for 5 minutes.
Notes:
White rice may be substituted for brown for a more "authentic" Rice-a-Roni flavor. Just cook the rice for 10-15 minutes, then follow recipe as written.
