This chicken was so super easy and ready in under 20 minutes. It is made all in one skillet where the chicken cooks in the sauce creating a deliciously flavorful thick tomato sauce.Enjoy!!!
One Skillet Italian Chicken
Ingredients:
- 1/2 tablespoon olive oil
- 2 boneless skinless chicken breasts, about 1 pound
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 1 cup crushed tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1 cup shredded mozzarella cheese
- 1 tablespoon shredded parmesan cheese
Directions:
- Slice the chicken breasts in half horizontally creating 4 thin chicken breasts. Season both sides of the chicken breasts with black pepper.
- Heat the olive oil in a large skillet, over medium heat.
- Place the chicken breasts into the skillet and cook on both sides until completely cooked, about 4 minutes per side.
- Add in the garlic and sauté for about 1 minute stirring constantly.
- Stir in the crushed tomatoes, oregano and red pepper flakes.
- Bring the mixture to a simmer, it will take about 1-2 minutes.
- Sprinkle both cheeses on top of the chicken and cover the skillet with a lid.
- Reduce the heat to low and continue to cook until the cheese has melted, about 2-5 minutes.
